An employee was observed handling soiled dishes and then proceeded to handle cleaned and sanitized utensils coming out of the dishwasher. [Corrective action] Any action that requires hand washing means that the food handler must discard the gloves they are wearing and/or wash solied hands before returning to food handling activities.

An employee was observed rinsing his/her hands with water only in the preparation area, then proceeded to handle ready-to-eat food (salad or cabbage) and mixed the salad with his/her hands in the preparation area. [Corrective action] To prevent cross-contamination, ensure to provide utensils to handle food, and ensure employees follow the proper handwashing steps in the handwashing sink.
