Rodent droppings observed under equipment and on cabinetry shelving in the front and back prep areas and at the self-service condiments counter. Droppings appear to be old-dry. Some fur observed under the rotisserie. Operator states that there was an infestation last month, but there has been no new activity. Clean up all droppings and fur using wet methods and clean and sanitize all food contact surfaces. Terminix is on contract to do routine pest control. Seal all possible entry points as discussed. If you see new activity, do not operate until rodents are excluded and all surfaces cleaned and sanitized. I recommend deep cleaning to remove accumulated food debris. 11/26/2018 inspection found rodent droppings in the back prep room on shelving and under the rotisserie. Droppings were immediately cleaned up. Clean and sanitize these areas and monitor for activity. Do not operate is new activity is observed.

The floor sink in the back kitchen (indirectly connected tot he prep sink and 3-comp sink) is clogged. Operator states that routine plunging is required to use the sinks. Clear this line today and send me the invoice. I recommend televising the line to see if there are any breaks in the pipe. There is no grease trap connected to these sinks. I will refer to Novato Sanitary.
