Observed shredded cheese near door of walk-in cooler at 44 F and cooked chicken at 48 F. Ensure all potentially hazardous foods are cold held at 41 F or below or 135 F or above. Back portion of walk-in cooler measured 41 F. Front portion of walk-in cooler near door measured an ambient temperature of 44-45 F. Keep walk-in cooler doors closed at all times. Lower the temperature of the walk-in to ensure all items are cold held at 41 F or below. About 1/4 of cooked chicken discarded.
