Observed dry and hard rodent droppings (mostly mice with possible rat droppings) on bottom shelf of dry storage rack and underneath dry storage rack in corner on floor. Observed rub marks along the wall leading from the top of the walk in cooler (used as storage) to the location of the droppings. Employee states a rat was seen ~6 months ago outside in the trash area, and the owner got medicine to treat for the rodent, and have not seen anything since. Clean up droppings by spraying with bleach and wipe up with paper towel. Clean and sanitize all surfaces and seal all holes, cracks, gaps and crevices using durable/smooth materials to prevent vermin entry. I suggest obtaining the services of a licensed structural pest control technician to identify entry points. Ensure door sweep reaches bottom of floor. Clean up and remove clutter stored on top of walk in cooler -- this may be a harborage site for rodents. Thoroughly clean floors of entire kitchen to keep clean and dry. An unannounced reinspection will be conducted to assess cleaning and monitor activity.
